The Cayena pepper is a small shrub up to 1 meter, it belongs to the family Solanaceae, and which fruit called it chili or chili. These fruits, when ripe, allowed to dry and then ground. The fruits are also known as peppers, yellow and start being as they mature they become red. When dry, they take a darker shade, after it is grinded, and the resulting powder is what is known as cayenne pepper.
This is the most common pepper mash ingredient for the industrial manufacture of hot sauces and other sauce recipes. It has a mild flavour and medium heat level ideal for a broad range of food applications. The shelf life of this pepper mash is 24 months.
