The cayenne pepper is a small bush of up to 1 meter. Is part of the solanacea family, it produces a small fruit with approximately 40,000 SHU. They start green and as they mature they become red. If let to dry and grind you obtain red pepper.
Our cayenne is harvested and mashed with salt while fresh, it creates a medium spicy paste. Its flavor has a smoky, acid and fermented taste.
We market our products mashed, naturally fermented and preserved in salt. According to client requirements we can add a percentage of vinegar and can also mix it with other varieties of our products to reach particular flavors. There are no chemical additives or flavorings. Shelf life is 24 months.
