Characteristics

Cayenne is a chili pepper variety from the genus Capsicum annuum. It is considered a mild chili pepper with approximately 40,000 SHU. Its flavor has a smoky, acid and fermented taste.

All our varieties are available mashed, pureed, concentrated or dehydrated after a short fermentation with salt. We do not add any artificial flavor or coloring. Special blends or additions of vinegar, acetic acid or other are also possible if the client needs such additional ingredients. Our objective is to work with each client to design the perfect ingredient for their final product.

Shelf life is 24 months.

Available in

Mashed (with seeds*), pureed (without seeds), concentrated (with or without seeds) and dehydrated in pods, flakes or powders.

*The seed is used when clients prefer a product with more texture.

Usage

This variety is ideal for industries that produce sauces, sausages, seasoned meats, flavored packaged food, dressings and medicines.
