Tabasco

Characteristics

Tabasco is a chili pepper variety from the genus  Capsicum frutescens,  originally from the Mexican state of de Tabasco. The fruits are small of about 5cm long and have a moderately spicy flavor.

Amarillo

Characteristics

Amarillo is a chili pepper variety from the genus Capsicum baccatum. It is one of the most important ingredients of the Peruvian cuisine, although it is now being adopted by other cultures too. With 40,000 SHU it is placed among the chilies with medium pungency along with the cayenne.

All our varieties are available mashed, pureed, concentrated or dehydrated after a short fermentation with salt.  We do not add any artificial flavor or coloring. Special blends or additions of vinegar, acetic acid or other are also possible if the client needs such additional ingredients. Our objective is to work with each client to design the perfect ingredient for their final product.

Shelf life is 24 months.

Available in

Mashed (with seeds*), pureed (without seeds), concentrated (with or without seeds) and dehydrated.

*The seed is used when clients prefer a product with more texture.

Colors

Yellow with orange tones.
