Advantages of fermentation

Fermentation is a natural way to preserve food since prehistoric times. This process helps maintain the flavor, color and smell of the chilies unchanged through time. In addition, it makes food more digestible  and nutritious. This practice gave birth to breads, fermented drinks like wine, cured meats and many other foods that are part of our daily life.

Moreover, fermentation is one of the many tools of preservation that do not require refrigeration or artificial preservatives. Hence becoming a process that involves very low energy  and promotes global sustainability.
